My childhood dessert, which I like to compare to Proust’s “petite madeleine”. The memories that are recalled through a dessert require a natural inclination towards imagination and poetic raptures. With crêpes, I go back to being a child every time.

INGREDIENTS
- 3 eggs
- 100 gr sugar
- 1 vanillia
- 250 ml milk
- 150 gr 00 flour
- 60 ml seed oil
- 1 pinch of salt
METHOD
Combine the ingredients in order as listed one at a time, stirring continuously with a hand whisk or electric whisk.
Heat a crêpe pan, grease with a little oil and pour in the mixture. Turn it over with the help of a spatula. To be filled as you like, I love to taste them like this with a little icing sugar.
